I have developed a reformed recipe from my late Mother-in-law's nyonya pickles called Acah. However, it is still well known as Traditional Home-made 5C Nyonya Acah.
The secret is in the 5 types of vege, so to be known as 5C
1st C - Cucumber ( which is the main vege )
2nd C - Carrot ( a great calorie looking colorful )
3rd C - Cabbages ( quantifies taste to it )
4th C - Cauli Flower ( another flavour to add )
5th C - Chillies ( adds color & spice )
All of the above are peeled, stripped & cut. They are then gradually steamed into vinegar, thoroughly until soaked ( you'd be surprised that only one 3rd of the veg is left after all that ). When they are cooked up, the deep fried pound chillies & tumeric are added to stir with crushed groundnuts and sesame seeds. Sugar & salt are added to taste.

The end taste of course is indefinitely sweet, sour & spicy ( the salt to taste are evolved ). Hmmmm yumyum !!
